你能食下一整個批嗎? Can you imagine devouring a pizza all by yourself? Not a slice or two but one whole pizza!! That is exactly what people in some European countries do on a regular basis – unlike Hong Kong, where one pizza is usually shared among a few friends. 香港人對薄餅情無獨鍾 In contrast to the European craze 1 for pizzas, people in Hong Kong are not that into this kind of flatbread decorated with various toppings. Thanks to her successful advertising campaigns, Pizza Hut seems to be representative of the food locally. Does the unpopularity of pizzas have anything to do with their keyingredient 2 cheese, which local people might not be entirely attached to? Or can it be attributed to the fact that pizzas are a relatively upscale mode of food in Hong Kong? Very often, a pizza can cost more than $100. 歐美薄餅各有千秋 estaurateurs in Europe and even the U.S. have creatively localized pizzas and have come up with variations3 in toppings that cater to local taste. In New York, for example, pizzas come in the form of a thin and crispy 4 crust 5 with tomato chunks 6 and less cheese. In Chicago, a deep dish pizza has an extra thick crust with a cake-like texture7 , lots of cheese and chunky tomato sauce. -
傳統薄餅薄脆易食 Pizzas that are vastly eaten in European countries have a very thin crust ------ a true Italian pizza dough should be no more than 3mm thick so that it can give a crispy and almost cracker-like 8 bite. As a result, it is far lighter than most pizzas available in Hong Kong. No wonder people there can manage to devour one whole pizza single-handedly. 研製具香港口味的薄餅 It is high time pizzas were tailored to suit local people’s taste. If the Americans can consume 9 billions of slices of this foreign specialty 10 very year and make it an iconic dish of considerable popularity, why can’t Hong Kong people do the same by developing their regional forms of pizzas? Possible choice of toppings includes roasted pork, fish balls, dried shrimps, tofu cheese and shrimp paste. 薄餅有助抗癌去皺? orget the taste; there are newly discovered health benefits associated with pizzas. A team of Italian researchers have concluded recently that regular pizza consumption reduces the risk of oesophagus11 cancer by 59%. Another research team found that pizzas covered with tomato paste can effectively act against sunburn and wrinkles 12. Both of these findings coincidentally attribute the benefits to lycopene 13, a chemical found in tomatoes. Then, one might ask, why not just consume tomatoes if what does us good is lycopene alone? Well, that’s another argument.
